We are exactly 12 days away from the official start of Summer Sixteen, and I couldn’t be more excited. I love summer! When I think about summer, I reflect on some of my fondest memories as a child growing up in Honduras.
Make the best cantaloupe sorbet recipe using only four ingredients. It is healthy, delicious and vegan!
One of my favorite summer treats are coquitos, you might know them as sorbets. Frozen fruits mixed with love, sugar and whatever they add to make it delicious. It is a must have in NYC! Since moving to DC, I’ve focused on recreating some of my favorite NYC treats.
This week I decided to make my first batch of Cantaloupe Coquito/Sorbet! The best part? You can enjoy this summer treat using only four ingredients, and it is an excellent healthy meal prep recipe!
For this recipe, we will use four ingredients: one cantaloupe, one lime, 1.5 tbsp of agave and two oz of water (optional).
Start by cleaning and cutting your cantaloupe into small to medium size chunks.
Using a container ( I used this small baking tray) I layered my chunks of cantaloupe using parchment paper to keep them from sticking to each other. Then I cover my container with saran wrap and put it in the freezer overnight.
After a minimum of 6 hours in the freezer, combine your freshly squeezed lime, 1.5 tbsp of agave and the cantaloupe in a blender or food processor.
Blend your ingredients until you achieve your desired texture, using the water is optional.
Once you blend your ingredients, transfer them to the container and put it back in the freezer for a minimum of two hours. Don’t forget to cover it with saran wrap.

Cantaloupe Sorbet topped with walnuts and a little agave.
- 1 cantaloupe ripe
- 1 lime
- 1.5 tbsp of agave
- 2 oz of water (optional)
Clean and cut your melon into small to medium size chunks
Using parchment paper layer your chunks on a baking sheet or a container. Cover it with saran wrap and place it in the freezer for a minimum of six hours.
Remove your chunks from the freezer and put them in a blender or food processor.
Add your freshly squeezed lime, 1.5 tbsp of agave to the blender and mix until you achieve the desired consistency. Feel free to use the water if needed.
Once you achieved your desired consistency, move your sorbet to a container and place it back in the freezer for a minimum of 2 hours. Make sure you cover it with saran wrap.
When ready, scoop, add your favorite toppings (I used ginger powder and walnuts), drizzle a little agave and enjoy.
